This process gives the spice a smoky aroma and flavor similar to bacon and/or ham.
Excellent to use on meat (baked/grilled/roasted) and for vegetarian dishes, potatoes- bringing its flavors closer to meat dishes. In Morocco, it is a widely used ingredient in Hummus, eggplant and in the famous tagines.
For a more intense flavor, add smoked peppers to vegetables or meat before cooking. You can spread the meat/ tofu and/or seitan, adding a little olive oil, let the meat marinate for 30 minutes (tofu/ seitan) up to 2 hours.
